All together now

I cannot believe December is just a few days away. Where did this year go? Ah well, that’s a thought for another entry. This Thanksgiving, I’m thankful for a lot — my family, my friends who are like family, having a job, the ability to trust my gut, not being afraid to take chances, and of course, my little fur monster, Wilson.

For Thanksgiving dinner, the main course wasn’t turkey. Instead, it started with:

This year, I made a chicken and bacon pot pie. I used my insomnia to my advantage and made the double pie crust in the wee hours of the morning to allow it time to sit in the fridge for the better part of the day.

For the pie filling, I cooked the bacon and then cooked the chicken in the bacon fat. Oh yes, I went there, baby. I put a bunch of veggies into a pot with a little chicken broth, fresh thyme and parsley, and then mixed in the bacon and chicken. It all went into the pie crust and about 40 minutes later, something delicious came out of the oven.

Sure, I used bacon and — gasp! — some butter, but I didn’t skimp on the vegetables. Roasted beets and sautéed kale were served as the sides. Amazingly, this was a potato-free holiday dinner.

For dessert, I baked a chocolate chip and pumpkin bundt cake, which was served with vanilla bean ice cream.
